Creamy Lemon-Peper Chicken Soup *Updated!*


A few weeks ago, we celebrated my husbands 31st birthday at a little Greek restaurant near our home. The soup of the day was a lemon & rice soup that was a little odd, but very delicious. I knew I wanted to recreate this soup so I set out on my handy dandy laptop and began searching.  I learned that the name of the soup is Avgolemono and is made with eggs. The soup I created is egg-less as I am not a big egg lover. It was a fun recipe to create and it is so delicious. I hope you enjoy it as much as I did.





Creamy Lemon-Pepper Chicken Soup
Ingredients:
Directions:  

1.  In a pot add 6 cups of water, chicken base, and chicken.

2.  Mince Shallots and add to the pot. Zest the whole lemon and add to the pot. Slice up half the lemon and add to the pot. Bring to a boil and cook until chicken is no longer pink.

3.  When chicken is done, remove from pot and shred with a fork. Remove lemon slices and add the chicken back to the pot. Squeeze the juice from the second half of the lemon into the soup. Add black pepper and salt. Allow to simmer for 10-15 minutes. 

4.   Add the carrots and heavy cream. Simmer another 10-15 minutes. 

5. Add 1/4 cup rice to each bowl and evenly divide the soup.

Apple-Pistachio Chicken Salad

Let me just say that lunch time can get a little boring in this household and panini sandwiches are pretty much a staple since we started to eat healthier.

However, I woke up this morning wanting to get creative with some of the new spices I got for my birthday (yes! you read that right! spices for my birthday!). I knew I had some leftover chicken breasts from the other night and decided to make a chicken salad. I am a "no-mayo, no-tomato, add onion kinda girl". And what I came up with was this :

Apple- pistachio chicken salad
Ingredients:
Directions: 
SALAD:
1.    In a food processor, finely chop cooked chicken and add to a large mixing bowl. Finely chop the celery, red onion, and apple and add to the bowl. Chop up the pistachios and craisins and add to the bowl.

2.    In a separate bowl, mix together the yogurt, honey, and lime juice.

3.   Using a mortar/pestle or spice grinder: grind all the spices together and add to the yogurt mixture. Stir well to blend all the ingredients. For a curry style salad, add in about ¼ tsp curry powder.

4.   Add yogurt mixture to the chicken and stir thoroughly to coat all ingredients..

I know that some of the ingredients in the dressing are a little unusual, so feel free to take the basics and add make it fit to your tastes!

There is no reason why our journey's to better health can't be suspicious but delicious!

Welcome!


Welcome to "Healthy Life Recipes". Some of them may be a little suspicious, but we have found them delicious!

2014 is a new year and the start of a new journey for me  (my dear husband and son get to tag along willing or not!). You can read more about my journey at my blog Noble Wife, Healthy Life.

I hope this blog will inspire others to get in the kitchen and cook healthy meals for their families.

My criteria for posting a recipe is as follows:

HEALTH/NUTRITION: We all have different ideas about health, calories, fat, etc. Most of my recipes will be tailored to be an  "ideal" ratio of calories/fat/protein/carbohydrates. I will list this information to the best of my ability. Please Note: I use a health website to add all the ingredients to a recipe and than based on serving size, the nutrition information is calculated. Because I can't guarantee 100% accuracy, the information should be used as a guideline.

BUDGET: For those that know me, I love to save money and that does not stop when it comes to grocery shopping. I aim to make dinners for less than $10. Sometimes this can be achieved and other times not.
 

TIME: I am aiming to keep the prep & cooking time to under 2 hours. I know that may seem like a lot to some people, but I love to cook from scratch and that usually requires several factors that add up in time.

TASTE: Obviously! There are just some "healthy foods" that taste horrid and I can't eat them. All recipes I post must pass muster!  Myself, Larry (DH), & The Moose (aka Brody my DS) will be the judges!

FUN: To me cooking is delightful. However, some recipes are fun, and others are a beast. I will try to stay away from the "beasts" as I want to be able to help others love to cook as much as I do.

I encourage everyone to take these recipes and get creative! Take them and make them your own!
